During the fifteen-year restoration, the team uncovered a 150-year-old pantry and kitchen space buried within the building's fabric. Rather than smooth it over, they turned it into a 90-seat restaurant named in honour of Mabel Crawford, whose portrait still hangs above the fireplace in the entrance hall.
The menu is built around locally sourced Irish produce, with O'Connell Meats and Good Fish among the trusted suppliers. Breakfast through to dinner is covered with a kitchen that clearly knows its ingredients and does not overcomplicate things. The tone is warm rather than formal, so a post-round dinner with the group feels relaxed and a casual lunch sits just as comfortably. Private dining is available for those who want something more intimate, and the afternoon tea is worth planning around if you have a free afternoon.
The Glassroom Bar & Lounge is where you want to be after 18 holes.
